Blueberry Orange Coconut Swirl Popsicles

 lemon-blueberry-pops_300A summertime favorite, try this for your next picnic party.

  • 1 cup fresh blueberries
  • 1 cup freshly squeezed orange juice
  • 1/4 to 1/2 cup coconut milk

Place the blueberries and juice into a blender or Vita-mix; blend until smooth. Pour into popsicle molds leaving a little room at the top of each one. Top each off with a tablespoon or so of coconut milk, then take a chopstick and lightly swirl it into the blueberry mix. Freeze overnight. Recipe by Nourishing Meals
