Turkey and Avocado Wraps with Honey Mustard

Prepare wraps in advance for a healthy and simple on the go lunch. Blanch a bunch of collard greens and store them in the refrigerator or use a gluten-free tortilla.

TurkeyAvocadoIngredients:

  • 3 large collard greens
  • 6 slices organic turkey breast
  • 1 small avocado, sliced
  • honey mustard

Recommended Additions:

  • grated carrot
  • grated apple
  • baby greens
  • tomatos
  • cucumbers
  • red bell pepper
  • ANY veggie of your choice!

 

Directions:

To blanch the collard greens, bring a pot of water to a boil. Trim the stems off of the collards and then place them into the pot of boiling water for 60 seconds. Carefully remove from the pot and place on a towel or plate to cool.

Lay one collard green on a plate or cutting board. Roll two turkey slices up an place them on the bottom, or stem end, of the collard green. Top with sliced avocado, drizzle with honey mustard. Add any optional additions if desired.

To roll, start by folding in the long sides of the collard green. Then begin to roll from the stem end, where the turkey is until the wrap is rolled. Place stem-side down on a plate or into a container and repeat with remaining ingredients.
