Apricot Glazed Chicken

Food - Meals - apricotchicken_1-photobucketThis delicious main dish can be prepared ahead of time and set in the fridge while you’re working, making a quick and easy dinner the family will adore, courtesy of Nourishing Meals.


  • 4 organic bone-in, skin-on chicken thighs (you should only eat organic chicken)


  • 1/4 cup fruit-sweetened apricot jam
  • 1/4 cup wheat-free tamari or coconut aminos
  • 2 tablespoons extra virgin olive oil or toasted sesame oil
  • 1 to 2 teaspoons grated fresh ginger


Rinse the chicken things and plece them into an 8 x 8-inch or 7 x 11-inch baking dish. In a separate bowl, whik together the ingredients for the marinade. Pour marinade over chicken. Marinate for 30 minutes or cover pan and place in the refrigerator to marinate for up to 8 hours.

Preheat oven to 400 degrees F. Pour off excess marinade from pan. Place pan in the oven and bake chicken for about 25 to 30 minutes.

Serve with veggies of your choice and brown rice for a complete meal.
