Blueberry Overnight Oats

07_blogBlueberries are an antioxidant rich, high-fiber, low-calorie fruit that is also rich in stress-fighting vitamin C. Try this delicious “overnight oats” and blueberry recipe or just grab a handful and enjoy!

  • 1/3 cup rolled oats
  • 1/3 – ½ cup of coconut or almond milk
  • 1/3 cup plain coconut yogurt
  • ½ banana
  • ½ cup of blueberries (or any berry of your choice)
  • ½ tbsp chia seeds
  • pinch of non-iodized salt, Diamond, or Mortons brands
  • pinch of cinnamon

Directions: Mix in a glass jar or bowl, place in the fridge overnight, and enjoy in the morning! Keeps in the fridge for 2-3 days for a quick breakfast when you’re on the go.
